These golden puff pastry pinwheels are stuffed with fluffy eggs, crispy bacon, and melted cheese—everything you love about breakfast rolled into one bite-sized delight. Perfect for brunch, weekends, or grab-and-go mornings!
Ingredients:

1 box puff pastry (2 sheets), thawed

6 oz bacon, diced

8 eggs, beaten

2 cups shredded cheddar cheese

4 tbsp butter, softened

3 garlic cloves, minced

2 tsp sriracha or ketchup

Salt & pepper

Jalapeño pepper jelly (optional)
Instructions:

Preheat oven to 400°F. Line a baking sheet with parchment.

Cook bacon until crisp; set aside. Scramble eggs with ½ cup cheese until just set. Cool slightly.

Mix butter and garlic in a bowl.

Cut each puff pastry sheet into 4 rectangles (8 total).

Spoon eggs down center of each, add bacon, sriracha, and more cheese.

Roll into logs, seam side down. Slice each into 3 pieces.

Arrange pinwheels cut-side down. Brush with garlic butter. Top with remaining cheese.
