Strawberry Earthquake Cake – Gooey, Fruity & Irresistible

This cake combines juicy strawberries, creamy swirls of sweet cream cheese, and a crunchy coconut-white chocolate topping. Easy to make with a boxed mix, it’s perfect for parties, family dinners, or any sweet craving!

Ingredients:

  • 1 box white cake mix

  • Ingredients listed on cake box (water, oil, eggs)

  • 1 cup fresh strawberries, chopped

  • 8 oz cream cheese, softened

  • ½ cup unsalted butter, melted

  • 4 cups powdered sugar

  • 1 tsp vanilla extract

  • ½ cup shredded coconut

  • ½ cup white chocolate chips

Instructions:

  1. Preheat oven to 350°F. Grease 9×13-inch pan.

  2. Prepare cake batter per box instructions, fold in strawberries, pour into pan.

  3. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.

  4. Drop spoonfuls of cream cheese mix over batter—don’t stir.

  5. Sprinkle coconut and white chocolate chips on top.

  6. Bake 40–45 minutes until golden and set (center may jiggle).
