A simple one-pan meal featuring tender salmon fillets, sautéed spinach, and mushrooms in a rich garlic butter sauce.
Ingredients:
- 2 salmon fillets
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Lemon wedges (optional)
Instructions:
- Sear the salmon: Season salmon with salt and pepper. In a skillet, heat olive oil over medium heat and cook salmon for 3–4 minutes per side. Remove and set aside.
- Cook the mushrooms: In the same pan, melt butter and sauté mushrooms until tender.
- Add garlic and spinach: Stir in garlic and cook for 1 minute. Add spinach and cook until wilted.
- Return salmon to the pan: Spoon the garlic butter mushrooms and spinach over the salmon.
- Serve hot with lemon wedges if desired.
