Smoky Jalapeño Popper Meatloaf

A spicy, cheesy twist on classic meatloaf—loaded with smoky bacon, cream cheese, and jalapeños for bold, crowd-pleasing flavor.

Ingredients:

  • 1 ½ lbs ground beef
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 jalapeños, seeded and chopped
  • ½ cup breadcrumbs
  • 1 egg
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Mix the meatloaf: In a large bowl, combine ground beef, cream cheese, cheddar, bacon, jalapeños, breadcrumbs, egg, smoked paprika, garlic powder, salt, and pepper.
  3. Shape and bake: Form the mixture into a loaf and place it in a baking dish. Bake for 45–50 minutes or until cooked through.
  4. Rest and serve: Let the meatloaf rest for 5 minutes before slicing. Serve warm.
