This easy, cheesy casserole is packed with Tex-Mex flavors—perfect for a no-fuss family dinner or potluck favorite.
Ingredients:
- 1 lb ground beef
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 1 can (10 oz) cream of chicken soup
- 1 can (10 oz) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (about 9 oz) tortilla chips, slightly crushed
- 1 small onion, diced
- 1 packet taco seasoning
Instructions:
- Preheat oven to 350°F (175°C).
- Cook the beef: In a skillet, brown the ground beef with the diced onion. Drain excess grease. Stir in taco seasoning, Rotel, and both soups.
- Mix the casserole: Remove from heat and stir in sour cream.
- Layer in a baking dish: Start with a layer of crushed tortilla chips, then add the beef mixture, sprinkle with cheese, and repeat layers.
- Bake uncovered for 25–30 minutes or until hot and bubbly.
- Serve hot with extra chips, salsa, or jalapeños if desired.
