Mexican White Trash Casserole

This easy, cheesy casserole is packed with Tex-Mex flavors—perfect for a no-fuss family dinner or potluck favorite.

Ingredients:

  • 1 lb ground beef
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 1 can (10 oz) cream of chicken soup
  • 1 can (10 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (about 9 oz) tortilla chips, slightly crushed
  • 1 small onion, diced
  • 1 packet taco seasoning

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cook the beef: In a skillet, brown the ground beef with the diced onion. Drain excess grease. Stir in taco seasoning, Rotel, and both soups.
  3. Mix the casserole: Remove from heat and stir in sour cream.
  4. Layer in a baking dish: Start with a layer of crushed tortilla chips, then add the beef mixture, sprinkle with cheese, and repeat layers.
  5. Bake uncovered for 25–30 minutes or until hot and bubbly.
  6. Serve hot with extra chips, salsa, or jalapeños if desired.
