Garlic Butter Salmon Spinach Mushrooms

A simple one-pan meal featuring tender salmon fillets, sautéed spinach, and mushrooms in a rich garlic butter sauce.

Ingredients:

  • 2 salmon fillets
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges (optional)

Instructions:

  1. Sear the salmon: Season salmon with salt and pepper. In a skillet, heat olive oil over medium heat and cook salmon for 3–4 minutes per side. Remove and set aside.
  2. Cook the mushrooms: In the same pan, melt butter and sauté mushrooms until tender.
  3. Add garlic and spinach: Stir in garlic and cook for 1 minute. Add spinach and cook until wilted.
  4. Return salmon to the pan: Spoon the garlic butter mushrooms and spinach over the salmon.
  5. Serve hot with lemon wedges if desired.
