Layered Mexican Coleslaw Tomato Corn Salad

A vibrant layered salad with crunchy coleslaw, juicy tomatoes, sweet corn, and zesty dressing—perfect for BBQs and potlucks.

Ingredients:

  • 3 cups coleslaw mix
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, canned, or frozen)
  • ½ cup black beans, rinsed and drained
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped

For the Dressing:

  • ½ cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions:

  1. Make the dressing: Whisk together mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
  2. Layer the salad: In a large bowl or dish, layer coleslaw mix, tomatoes, corn, black beans, red onion, cheese, and cilantro.
  3. Top with dressing: Pour dressing over the top or serve on the side.
  4. Chill before serving for at least 20–30 minutes to let flavors combine.
